Homemade Ranch Dressing

As a teenager, I used to babysit for a boy who loved ranch dressing on everything. He dipped anything and everything into it and I'm pretty sure he would have drank it if no one was watching. 

I'm not as big a fan as he was of ranch dressing, but I do love it. I just don't like the idea of pouring ready made dressing into my food. I'm convinced that the preservatives and sodium are just too high for me to enjoy it. 

Now I've discovered a recipe for ranch dressing that has no preservatives and tastes amazing. I've tested it on grilled wedges of iceberg lettuce (yes, you read that right!) and every single leaf of the lettuce was gobbled up. 


Homemade Ranch Dressing on Grilled Iceberg Wedges - serves 8

300 g silken tofu
1/2 cup milk
3 tablespoons lemon juice
2 cloves garlic, minced
1 tablespoon parsley, chopped
2 green onions, chopped
Salt and pepper to taste
2 heads of iceberg lettuce, core left in
Oil, for spraying

1. Start by making your dressing. Combine tofu, milk, lemon juice, garlic, parsley, and green onions in a blender and purée. You could also use a large bowl and an immersion blender. Season to taste with salt and pepper.

2. Grill your lettuce. Cut both heads of lettuce into four even wedges. Be sure to leave the core intact. Spray cut sides of the lettuce with oil.

3. Place ech wedge of lettuce, one of the cut sides down, on a BBQ preheated to medium heat. Grill until grill marks appear, about 1-2 minutes. Flip and grill the other cut side.

4. Serve wedges covered in dressing and enjoy!

I know both the tofu in the dressing and the grilling of lettuce is weird, but once you'll give them a try you'll see how good they both are. :)
