I bike to work everyday and this month marks the weather where I am finally happy to strap on my helmet and pedal. The cherry trees are in full bloom, it's warmer, and I feel great having gotten a little exercise before sitting at a desk all day.
I like to think I deserve a treat for a pick me up in the afternoon after all that pedalling, but I try to choose something healthy (most days) because staying in shape is why I've taken up biking. Healthified Greek Layered Dip - serves 4
1 cup hummus, purchased or homemade
3/4 cup Yoplait Source plain yogurt
1 Roma tomato, cut in small chunks
1/4 cucumber, cut in small chunks
3 tablespoons kalamata olives, pitted and sliced
3 tablespoons feta, crumbled
Whole grain tortilla chips or toasted pita, for dipping
1. Smear hummus on the bottom of a serving plate. Top with Yoplait Source plain yogurt.
2. Sprinkle tomatoes, cucumber, olives, and feta on top.
3. Serve with tortilla chips or toasted pita for dipping and share your healthy snack with friends.
