Mash Up

Some of the best things in life are a combination of two great things.

You've got songs like the ones from my favourite TV show Glee. I love the one pairing Beyonce's Halo with Katrina and the Wave's Walking on Sunshine!

There's the Dark Side of Oz with the Wizard of Oz movie providing the visuals and Pink Floyd's the Dark Side of the Moon providing the sound.

Then there are books like Pride and Prejudice and Zombies. That mash up needs no explanation. But if you haven't read it, I recommend it!

Finally, there are other mash ups like jorts...

Luckily for you, my mash up is nothing like an old pair of jean shorts...

Potato Celeriac Mash

1 large celeriac (also known as celery root), peeled and chopped into even pieces
2 medium starchy potatoes like Idaho or Russet, peeled and chopped into even chunks
1 tablespoon of salt
1/2 cup whole milk
3 tablespoons butter
Pinch of salt and pepper

1. Place chopped celeriac and potatoes into water with 1 tablespoon of salt. Bring water to a boil and cook until veggies are are soft, about 20 minutes (depending on size).

2. Drain water and mash with a hand masher, ricer, or whip with a hand mixer. Add butter and milk and continue to mash until the veggies reach your desired consistency.

3. Season with salt and pepper and enjoy!

I think this mash up shows how a simple mashed potato can become fantastic when paired with something else.

Just make sure you use a starchy potato because they absorb moisture so well and give a really smooth mash. If you don't take my advice and your mash up tastes like jorts, I will not take the blame.

Hint: If you don't know what to look for when buying celeriac, here's a shot of one!

I bought this on Saturday morning and by Sunday afternoon the green sprouts of the celery had appeared from nothing! Crazy isn't it?
