Sometimes I get home from work on a Friday and I just couldn't care less what I ate. Crackers and cheese, toast and eggs, even a microwave dinner would do some nights.
All those things go with wine or a mixed drink right?
But some Friday nights I do want a nice meal and I don't want to go out to get it. I want one that's really easy to cook and tastes great. This recipe for Jamaican Jerk Salmon is perfect for those nights.
And it goes great with rum punch too! :)
5 small fillets of salmon, skin removed or on
1 1/2 tablespoons olive oil
1 tablespoon lemon or lime juice
2 tablespoons chili garlic sauce
1/2 teaspoon ground ginger
1/2 teaspoon brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 pinch of salt and pepper
1. Preheat oven to 400 degrees.
2. In a small bowl, combine oil, lemon or lime juice, chili garlic sauce, ginger, sugar, cinnamon, nutmeg, salt, and pepper. Mix well.
3. Place all salmon fillets on a cookie sheet and divide the jerk sauce between the fillets. Use the back of a spoon to spread the sauce evenly over each fillet.
4. Bake for about 10-12 minutes or until fish flakes easily when tested with a fork.
That's it! Could this dinner be any easier?
