My mom loves peameal bacon and she loves to BBQ, so it only makes sense that this sandwich is one of her favourites. It has grilled peameal or turkey bacon, fried zucchini, melty cheese, sweet peppers, and a really flavourful tomato marmalade. I have a feeling that you're going to want to eat one of these sandwiches as soon as you see the photo.

Peameal Pileups - makes 8 sandwiches

8 burger buns
8 thick slices of peameal or turkey bacon
2 red peppers, sliced into thick wedges
8 pieces of lettuce
2 tomatoes, roughly chopped
2 tablespoons of marmalade
1 small eggplant, sliced into rounds
1 egg, beaten
3 tablespoons flour
Salt, to taste
1 teaspoon pesto
2/3 cup breadcrumbs
1/3 cup grated Parmesan cheese
3 tablespoons oil
8 slices of Havarti cheese
1. Start by making little eggplant parmesans. Combine salt and flour in one dish, egg and pesto into another, and in a third dish combine Parmesan cheese and breadcrumbs. Toss eggplant slices in flour, dip in egg, and coat in breadcrumb and cheese. Pan fry in oil to brown, then place on an older cookie sheet and finish cooking on the grill.
2. Next make your tomato marmalade. Combine tomatoes and marmalade in a small pot and cook on the stove or on the burner on the BBQ until it reduces to a sticky sauce, about 20 minutes at medium low heat.
3. Now grill your bacon and red peppers. And toast your buns if desired.
4. Layer up your Peameal Pileups with grilled peameal bacon, a slice of Harvarti cheese, a piece of lettuce, a piece of eggplant Parmesan, and some tomato marmalade. Enjoy!
I'll always be calling these sammies Peameal Pileups because the name is so fun to say, but grilled turkey bacon is something special too and is definitely something worth trying more than once! Which is better in these Pileups, you tell me!
