Nutty for Lentils

I used to think if lentils as a heavy starch, something to eat instead of potatoes. Now I have learned exactly how wrong I was. Lentils are a great protein, not a starch! And at a price of just $2.00 or so for a big bag, they're a great deal too. 

This dish is full of spicy curry, cooling yogurt, salty cashews, and sweet raisins. I think it will have you going back for seconds, so make enough for everyone!

Curried Lentil Salad - serves 4

1 cup green lentils 
2 1/4 cups veggie broth 
3/4 cup raisins
3/4 cup plain yogurt
Juice from one lime
3 teaspoons curry powder
1/2 bunch green onions, minced
1/3 cup cilantro, minced
Salt and pepper, to taste
Cashews, for garnish

1. Combine lentils, raisins, and broth a large pot. Simmer for about 20 minutes or until lentils soften. 

2. While lentils are cooking, combine yogurt, lime juice, curry, green onions, 1/2 of the cilantro, and salt and pepper in a large bowl. 

3. When lentils are finished cooking, drain any remaining cooking liquid, and add the to the yogurt dressing. Toss to combine. 

4. Serve with a garnish of the remaining cilantro and cashews. Enjoy!
