Not Such a Small Fry

Is there a person out there who does not love fries? I can't imagine there is anyone, but if there is a person out there that doesn't love fries - this post is for you. It's for you because it's going to convince you that you actually can love those crispy little treats.

The fries in this post aren't just any fries, they're healthy and still taste awesome! They're not deep fried, they're not not made of potatoes, and they have a little cheese in their breading. And like I said, they're awesome!

Curious yet? These fries are made out of squash and zucchini, breaded with a little Parmesan cheese, and baked! Read on for the recipe!


Parmesan Squash and Zucchini Fries - serves 4

6 cups of sliced baby squash or zucchini 
1/2 cup flour
1 teaspoon salt
1/2 teaspoon paprika 
2 eggs, beaten 
1 teaspoon dried herbs
1/2 cup Parmesan cheese, grated 
1 cup Panko bread crumbs 
Olive oil, for spraying veggies

1. Preheat oven to 400 degrees and line a cookie sheet with parchment paper. Spray or brush the parchment with a little oil.

2. Combine flour, paprika, and salt in one shallow bowl. Put the beaten egg in another shallow bowl. And combine the cheese, bread crumbs, and herbs in a third shallow bowl. 

3. Coat each piece of squash in the flour, dip them in the egg, and coat them in the bread crumbs. Then lay them on the parchment lined cookie sheet and spray or lightly brush each piece with a little oil. 

4. Bake for about 15-20 minutes or until crispy. Enjoy! 

After just one bite, you'll be hooked. They're that good!
