Sweet, Sour, and Summery

I bet when some of you looked at this picture of this salad you thought, oh great another simple salad and now she's adding radishes....

Well if you did think that I'm happy to you that you're half right, but you'll hopefully also be pleasantly surprised. This is another simple salad and I am adding radishes, but it's much more than that too. Today's salad is slightly deceptive, but in a good way. All the veggies, except for the lettuce, get marinated in a sweet and sour mixture that makes this salad special and bright. 

I think this salad will reign supreme at my house this summer with many different veggies taking the starring role. I hope you all love it too. 

Sweet and Sour Veggie Salad - serves 4-6

1/2 cup rice vinegar, or regular white vinegar with a few teaspoons of extra sugar stirred in
1/4 cup sugar
1 tablespoon soy sauce
1 tablespoon oil
2 teaspoons sesame oil
2 teaspoons minced fresh ginger
4 radishes, thinly sliced
1/3 cucumber, thinly sliced
12 grape tomatoes, halved
2 stalks of celery, thinly sliced
1 carrot, thinly sliced
3 green onions, minced
1 heart of romaine, torn into bite sized pieces

1. Combine vinegar, sugar, soy, oils, and ginger in a large bowl. All all veggies, except for the lettuce. Let veggies marinate for about 20 minutes.

2. Drain veggies from the marinade and toss with lettuce. Serve and enjoy!

This simple salad actually helps you in the kitchen. You can get your salad prepped and marinating, then make a something to go with it, toss the veggies with the lettuce, and serve.

Or better yet, have your partner do it for you so you can put your feet up. That would be a real treat!
