Vegetarian Game Day Food

Whether you're a Broncos or a Seahawks fan, I know you're interested in Super Bowl food for this weekend. Sliders, wings, nachos, and beer probably come to mind when you think about game day food, but what about vegetarian options? And before you mention that celery and carrots come with the wings, that wasn't quite what I had in mind.

I want to make something that would make a carnivore happy today because most Super Bowl fans seem to like their meat. But, of course, my dish is going to meat free and I bet I could fool quite a few people into thinking their chowing down on something meaty.

Ready to trick people into thinking these Sloppy Joes aren't for a vegetarian? Read on for the recipe.


Vegetarian Sloppy Joes - serves 6

2/3 cup dry white beans
2/3 cup millot
1 carrot, diced
1 bell pepper, diced
2 cloves of garlic, minced
1/2 onion, diced
1 teaspoon salt and pepper
4 cups of water
1 small can of tomatoes paste
3 tablespoons black bean sauce
6 buns
Lettuce, for garnish

1. In the morning, add all the ingredients except the black bean sauce, buns, and lettuce to the slow cooker. Stir to combine.

2. Turn the slow cooker on low and cook for about 7-9 hours.

3. Stir the black bean sauce into the slow cooker mixture and toast the buns.

4. Scoop generous spoons of the beans in the buns, top with lettuce, and enjoy!
