Plum Lucky

I just got back home from visiting my family and I'm ready to start sharing recipes again!

First up is a great scone recipe that my mom and I put together one cold morning at the cottage. We didn't have all the ingredients we needed so we subbed in what we had and came up with a winning combination.

Here's to the delicious Zesty Plum Scones we made. It's lucky we had a big stock of plums!


Zesty Plum Scones - makes 12

2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 pinch of salt
1/3 cup butter, cold and cut into small pieces
2/3 cup cream
2 2/3 cups chopped plums, about 4 plums
Zest from 1 lime

1. Preheat oven to 400 degrees and line a baking tray with parchment paper

2. Combine flour with sugar, baking powder and salt in a large bowl. Crumble in butter and then stir in cream, the plums, and zest. 

3. Spoon mixture onto the baking tray in about 1/4 cup mounds. Bake until golden and firm, about 15-18 minutes. 

4. Serve immediately and enjoy!
