20 Minute Dinners

I am love with quesadillas. I love them done in a pan, on the BBQ, or in the oven. I love them filled with anything, but gooey cheese should always be involved. Basically I don't think anything is wrong with them.

But this recipe is one of the best. Smokey black beans mashed up with garlic powder and cumin. Lots of gooey cheese. Avocados smeared over everything. And they're quick to whip up. Perfect? I like to think so.


Spiced Black Bean Quesadillas - makes 4

8 small tortillas
1 can of black beans, drained and rinsed
1 teaspoon each of cumin and garlic powder
1/2 teaspoon of red pepper flakes
1 tablespoon of lime juice
2 avocados, sliced
3/4 cup of grated cheese
1/4 cup of cilantro
Salt and pepper, to taste

1. Combine black beans with cumin, garlic powder, red pepper flakes, and lime juice. Purée in a blender, leaving the mixture a little chunky. Season to taste with salt and pepper.

2. Divide mixture into four and smear onto four of the tortillas. Top each with slices of avocado, grated cheese, and cilantro. Sandwich shut with another tortilla.

3. Pan fry in a non stick pan with a little oil, grill on medium heat, or even bake. Just cook until cheese melts and the outer tortillas crispy up.

4. Cut into pieces and enjoy with salsa, sour cream, or anything you fancy.
